The Gold of Salento
The Schirinzi Olive Oil Company has its roots in Carmiano, Lecce, near Porto Cesareo, a rural area in the Salento of Puglia known for agriculture and particularly for the production of Puglian oil and wine. Based in the center of town in the 1960s, since 1978 the facility has been located in its current production site, on the outskirts of Carmiano, preserving the traditions handed down from father to son.
In the Salento peninsula, which overlooks the Adriatic and Ionian Seas, lands of Ancient Otranto, olive groves are the distinctive feature of the landscape. Miles and miles of countryside dominated by the cultivation of ancient olive trees, where twisted trunks emerge from the red earth, allowing silver-green foliage to shine against the blue sky. It’s a landscape of great charm, combining the undeniable beauty of centennial trees with the hard work required to cultivate them, work suggested by the white dry-stone walls that separate the estates. The economy of Salento is closely tied to its ancient olive trees, so much so that the main ingredient of Salento cuisine is precisely extra virgin olive oil, also known as the Gold of Salento.
The oil is obtained from the pressing of the finest olives from Salento and is ideal raw as a condiment, especially Salento extra virgin olive oil, to enhance the flavor of traditional dishes and also as a preservative, capable of enriching any garden product. Typical of Puglia are the preserved vegetables: artichokes, sun-dried tomatoes, zucchini, eggplants, mushrooms, peppers, wild onions, and olives.
The Oil of Salento, genuine and Mediterranean, is now appreciated on tables all over the world.

Olive Harvest at Schirinzi Company
A collection of photos during the olive harvest in the company’s olive groves, where the olives are picked directly from the trees using harvesting machines.
One can admire the beauty of the olive trees in Salento during the olive fall.
In our oil mill, once the olives reach the beginning of the ripening phase, we promptly proceed to harvest them directly from the trees during the periods from late October to early December.
This harvesting method begins with the placement of cloths or nets made of fiber under the tree, after which the fruits are picked directly from the tree by hand or with the aid of machines, funneling all the product onto the cloths. This process ensures the quality of the future product, after which the olives are sent to our oil mill where they are pressed on the same day.

The timely pressing of olives after harvest allows us to obtain a cold-pressed extra virgin olive oil with unique and unmistakable organoleptic characteristics. The images of the freshly produced oil after pressing are striking; during this phase, many olive producers and customers eagerly await the “birth” of their oil after the immense sacrifices made throughout the year.
This is the final production phase after the biological cycle of the olives, and for everyone, it represents a release!
