Cold-press olive extraction in the Mill

The olive pressing activity takes place in the oil mills that were expanded and modernized in 2005, with a production capacity of 500 quintals of olives every 8 hours, corresponding to an output of approximately 100 quintals of extra virgin olive oil every 8 hours. The facility used by our company features an advanced continuous oil mill of the Pieralisi type.
The olives collected, delivered daily to the mill, are pressed using continuous cycle systems at controlled temperatures, thus producing a cold-extracted oil with completely authentic and unaltered sensory characteristics.
The company also provides olive milling services for third parties for olive producers in neighboring areas.

Phases of Olive Pressing

The cycle of olive pressing, carried out continuously, includes the following phases:

Unloading the Olives

The process begins with the unloading of the olives into a discharge hopper, positioned below the floor to facilitate the operation.
From here, the olives are transferred via a conveyor belt in well-measured quantities; the surface of the conveyor is equipped with chevron-shaped strips that allow the fruit to remain on it during the transfer.

At the top of the conveyor, there is a leaf remover that serves to separate the fruit from light foreign bodies (leaves, twigs, etc.) that will be excluded from the processing cycle, unlike the olives, which fall into the washers;


Washing the Olives

The olives pass through continuous water washers, where they are mixed and agitated by air currents from the bottom, ensuring washing and the removal of dirt.

The olives, well separated from any pebbles, are transported by flowing water to a second hopper, crossing a grid that retains any leaves still present.


Crumbling and Mixing

From the second hopper, the fruit is conveyed, via screw elevators, to crushers for appropriate crumbling; the crushed olives appear in the form of oily paste, which undergoes mixing (20-30 minutes) to facilitate the breaking of the membranes of the oil cells and to homogenize it.
This phase is called mixing and is performed by mixing machines, which are cylindrical in shape;

within these, hot water circulates to enable the heating of the oily paste, thus facilitating oil extraction. Our mixing machines allow these functions to be carried out at a controlled temperature, thus producing an oil “cold-extracted” as the temperature of the oily paste is maintained below 27 °C.


Pressing and Decantation

The mixed paste is sent to extractors known as Centrifuges or Decanters, with transfer occurring via single-screw pumps designed to ensure a steady supply of oily paste to the extractor. In the extractors, the force of centrifugation immediately separates the oil, the vegetable water, and the pomace;
the oil must obtained from olive pressing via centrifuge is first filtered in vibrating baskets to remove any pomace residues, and then sent through pumps to a special centrifuge separator to be freed from any remaining water droplets.
The resulting product undergoes natural decantation processes, yielding a unfiltered oil, which presents a slight haziness, guaranteeing quality and authenticity while preserving the distinctive flavors and sensations of the fruit.

After the olive pressing phase and the oil decantation phase, which can last about 30 days, the product is directed to the oil packaging stage through a bottling system using inert gas (nitrogen), and is then sold at our oil sales point or directly online through our online shop.
