The origins of Schirinzi Company in Salento
The Olive Oil Mario Schirinzi Company has its roots in the 1960s from the traditional mill of its founder (Pasquale Schirinzi), located in the heart of Carmiano (Lecce), an area in Salento to the south of Puglia, dedicated to agriculture and particularly to the production of oil and wine.
In 1963, the company’s production was focused on the agricultural activities of collecting and pressing olives, as well as threshing and light plowing for third parties.
The growing market demands and the experience gained led to the relocation of the oil production plant to the outskirts of the town of Carmiano in 1978, preserving the traditions passed down from father to son. Additionally, a policy from the owner, particularly attentive to customer needs, has allowed for the expansion of olive cultivation and a constant renewal of olive pressing facilities.
The New Generations: From Oil Producers to Transformers
Since 2005, with the advent of the new generations, the oil company has begun its activities as producers of extra virgin oil with a significant and substantial enlargement and modernization of the facility, thus being able to target markets that extend beyond Puglia’s borders.
The oil transformation and production facilities cover an area of approximately 2,000 square meters and have an associated outdoor area of 15,000 square meters.
The Production of Salento Olive Oil
The approximately 40 hectares of olive grove owned by our family, located just a few kilometers from the coasts of Salento, the Ancient Land of Otranto, combined with our experience in olive harvesting and cold pressing passed down through generations, allow us to produce a prized Puglia extra virgin olive oil, a superior oil with unique and unmistakable sensations. The olive trees, over 6,000 both young and ancient, are primarily of the Salento varieties: Ogliarola Salentina and Cellina di Nardò; the olives are hand-picked from the tree or using mechanical means before the fruit has fully matured.
Our fruity extra virgin olive oil and cold extracted oil is not available in traditional commerce, nor can it be found in large-scale distribution; we are producers of exceptional extra virgin olive oil, and we cater directly to discerning consumers who prioritize quality of life with the guiding principle of: health prevention and well-being.

The search for quality as an oil sommelier
In our oil company, the continuous research on packaging innovation is accompanied by the improvement of the sensory profiles of extra virgin olive oil production. So much so that Emanuele Schirinzi, head of the Schirinzi Oil Company and passionate about this work passed down from his family for two generations, has obtained the title of OIL SOMMELIER awarded by the Italian & International Sommelier Association.
The title of sommelier makes us proud to spread the culture of extra virgin olive oil, its visual, olfactory, and gustatory analytical characteristics. It also allows us to provide our customers with the tools and skills to best pair any extra virgin olive oil with food, creating a complete harmony where one enhances the other.
Tasting an extra virgin olive oil means learning to know it, thus connecting the perceived sensations not only to taste or smell (bitter, spicy, fruity, intensity) but also to the origin, the cultivars, the type of extraction, and the evolution of the product itself.
