What Extraction Method for Extra Virgin Olive Oil

Olive oil is the only vegetable fat that is extracted mechanically, meaning through simple pressing or crushing of the fruit, without further chemical or physical manipulations. In contrast, for seed oils, extraction occurs through chemical processes using special equipment and chemicals, such as hydrocarbons like butane, propane, and hexane. These seed oils are therefore chemically treated with reagents until deodorized and made presentable for consumption. Advertisements often do not mention these facts, but instead, consumers are pacified by many individuals who jump a fence as if sunflower oil (which is too high in polyunsaturated fatty acids, to the point of taxing our metabolism) truly protects the heart (!!!).

In light of this, the mechanical extraction method is always to be preferred over the chemical one, which is why the only oil recommended for seasoning our food is olive oil, particularly one with excellent characteristics: extra virgin olive oil.
