How to Store Extra Virgin Olive Oil at Home

Extra virgin or virgin olive oil is legally required to be stored within 24 months from the bottling date. However, the bottler must guarantee the analytical parameters set for each market category of oil sold. If the oil has recently expired, even by a few months, but has been stored according to the prescribed rules, it can still be used without concern. The expiration date is mainly imposed by law for retailers, where it may happen that containers stay on display for long periods and the unaware customer, thinking they are buying fresh oil, actually purchases older oil. We always recommend opening any expired container and tasting the oil before use: if it is pleasant to the palate, it can be consumed with complete peace of mind; if the unmistakable rancid taste is detected, it is best not to consume it.

Poor Storage Conditions Affect Olive Oil Quality

The most significant alteration is oxidation, that is, rancidity. The main factors that promote this alteration are oxygen and light. Our company uses glass containers and tin cans for bottling because these materials allow for greater stability of the organoleptic properties. Additionally, the bottles are made of dark green glass to hinder light penetration and protect the oil from ultraviolet radiation.However, it is necessary for the customer to follow some guidelines to guarantee and store oil at least until its expiration:

    • a temperature between 10 and 20 degrees Celsius is considered ideal for storage; avoid freezing the oil or exposing it to high temperatures. We recommend storing the supply in a cellar to prevent fluctuations between winter and summer temperatures;
    • direct or diffused sunlight accelerates oxidation, so it is better to keep your supply in a dark place;
    • it is a good practice to keep the container tightly sealed since household pests may be attracted to oil, and the air exchange accelerates oxidation and decay;
    • it is advisable to keep the oil, even in well-sealed containers, in ventilated areas without any odors. Oil is a fat and absorbs any unpleasant scent and more;
    • we advise against pouring the product, unless for immediate use, into transparent oil dispensers, crystal or similar containers, as it would be less protected than in appropriate tin cans and green glass bottles.
